It really is rather remarkable- even the usually middle-of-the-road, inside the box thinker and conventional diet cheerleader Dr. Oz has come on board with him along with his new, excellent book Grain Brain.  I know, it seems unbelievable that the Wizard of Oz, who has been the man hiding behind the curtain of outdated science for all these years, has now come out and jumped on the anti-grain, low carb, paleo bandwagon!

I don’t know what happened; maybe the wizard gave himself a medal, and got courage ala the cowardly lion- who knows?  At any rate, it appears that Dr. Oz refers patients to Dr. Perlmutter, simply because using his methods and theories of proper diet, he gets real-world GREAT RESULTS!

YES, FAT IS BACK!!

And carbohydrates, particularly GRAINS, and even more specifically WHEAT are all shown to be the dietary nightmare that they really are!

This turnaround by Dr. Oz seems to be a real turnabout of the entire dietary lipid hypothesis, that has been around since the 1960’s, and has never been proven...

You know, the hypothesis that virtually everyone has taken as gospel for all those past 50 years or so, the same 50 years that obesity has exploded, and diabetes, cancer, and heart disease are rampant in their spreading across the nation, and the world!

The hypothesis that told us fat is bad, grains are good... sugar is fine, whole grains are the foundation of our nutrition and  places them at the base of our stupid Food Pyramid and now My Plate...

Well, this whole theory is wrong- not only wrong, but exactly opposite of how we should be eating!  It truly boggles the mind that it has taken this long to convince people to start to look at the truth- I guess it kind of shows the completely addictive qualities of grains and sugars:

We don’t WANT to give up our DRUGS!

For that is indeed what they are, grains and sugar have drug-like effects, that also have the effect of making us fat, diabetic, and progressively very, very sick.


So, read David Perlmutter’s book- get the audio version if you don’t have time to read; that way you can just listen as you drive!  But get his ideas into your head, so that they can save your mind, and the rest of your body!  It’s never too late, as he points out, he has very elderly people reverse their symptoms of dementia, along with a host of other diseases, quite quickly.

Go Paleo, young or old, man or woman!!

The other thing I want you to remember to do?

ADD IN GOOD FOODS!  Eating a paleo diet is not just about subtractions!!

There are a number of folks who go gluten free- well, this is a great first step, but eating bakery goods made with rice flour, etc.- while not containing gluten, these products still  turn to sugar, right in your little mouth, and then proceed to poison your rapidly growing NOT so little body.

Step two- you give up grains!  This will really get you healthier, fast- but NOT if you still eat lots of processed foods, sugar, rice, soy- you will still be raising your blood sugar to dangerous levels!  All these years of worrying about our cholesterol levels- we should have been monitoring our blood sugar levels...

Step 3- add in lots of fats and vegetables!  A Paleo Diet is not just about eliminating bad, man made foods- more importantly, it is about
ADDING IN LOTS OF REAL, GOD-MADE FOODS!!!

Pastured butter- rich in K2- it takes calcium away from heel spurs, fights kidney stones, heart plaque, helps blood pressure regulate, and actually can help you remineralize your teeth and bones!  Pastured eggs, grass fed beef, pastured pork, organic vegetables of all sorts are all wonderful foods, and grass fed beef liver is a fountain of youth!  Full fat Greek yogurt, raw milk and cream, bacon- believe it or not, these are all extremely satisfying and healthy foods!
As for fruit, it is wonderful as well- in small amounts!  I usually use a handful of berries to flavor my daily paleo smoothie, perhaps with a small apple, and that will be it for fruit that day.  That’s all you need- berries in particular are loaded with nutrients and phytonutrients, but they come with the cost of raising your blood sugar- so keep it minimal!  Safe starches?  Same story- keep them minimal!!

A half cup of rice, a sweet potato on occasion- these are fine, and keep us part of  traditional eating in society... but keep it minimal!  Anything that raises blood sugar dramatically is playing with fire!

When tempted to eat sugar or carbs, just eat more fat and protein!  Throw in some veggies, perhaps steamed or grilled and then slathered with butter...

Don’t go hungry!  Just eat the right foods- real, God Made Foods!!

This is the way to health.

Crock Pots!  Crock pots are the best and easiest way to COOK your food, slowly and delectably, breaking down all the fibers and cell walls of your ingredients- rather like a “slow cooking Vitamix”, but much slower, and hotter- but with a lot of the same results.

If you drink coffee, (and I recommend you do!) get this gadget!  It makes the BEST coffee you’ve ever had, period, and it does so easily.  It is also quite cheap to buy!  But also get the stainless steel coffee filter http://prima-coffee.com/able/disk-fine

The paper filters that come with it are fine, but they also tend to “shift” when making multiple cups from one load of coffee ( I like to make 3 cups per day from one loading- I add more water from my teapot after each cup, and, using the stainless steel filter, the filter never “shifts” and lets in coffee grounds, like the paper ones did!

I make “Bullet Proof” coffee, sort of- I just use a good organic coffee, and dissolve coconut oil in the cup by pouring the coffee on top, and then top with real whipped cream, cinnamon and cloves...  very, very healthy, inexpensive (bullet proof brand coffee is $18.75 for a 3/4 pound bag), and, I prefer to put my pastured butter in my Paleo smoothie rather than in my coffee, and whipped cream and coconut oil have a vastly superior taste, and double the bang for your buck to boot of good fat!

My other gadget?  A dehydrator!  You can easily make jerky, and kale chips.

Oh- a Weber grill!  I grilled today, and it is 12 degrees outside.  Grass fed beef roast, pastured bratwurst, and sausages...


My last point is this: fill up with as much nutrient dense foods as you can!  Don’t even think of “eating less” to lose fat- that whole mindset is completely wrong.

If you start out with a nutrient super dense Paleo smoothie in the morning, along with eggs and pastured bacon, have some more smoothie mid AM, have a huge, meat or seafood topped salad with mixed greens and real oil and vinegar dressing (no soy!), have almonds and dark chocolate for a snack, some more Paleo smoothis mid-afternoon-

I swear you will be so stuffed you will NOT be tempted by any junk foods, like bread or pasta or candy or cake or cookies etc.   You will just be TOO FULL!

You may wind up like me, and usually just skip supper...

BECAUSE YOU ARE JUST TOO DARN FULL!!

That’s great; you are now “intermittantly fasting”, which has numerous benefits of its own!

Go to bed early, and wake up HUNGRY- you have a lot of food to eat:
A Paleo Smoothie, eggs and bacon, coffee with coconut oil and whipped cream...

Got it?  Stay FULL, and you will LOSE FAT and be HEALTHY!

How to Make Yourself Fat and Sick!

It's really no trick to make yourself fat and sick- just follow standard medical advice and common wisdom:

Eat a low calorie, low fat diet!

This will ensure that you are constantly hungry, which will cause your body to be scared that it is starving.  Your metabolism will slow, and your body will put a high priority on storing body fat!


Cut WAY back on eating fats, since everyone knows that eating fat is what makes you fat!

Now you will be really hungry, all the time, since good fats are what satiate our appetite.  You will constantly be "grazing" for food, probably in the form of grains and sugars...

Exercise more and eat less!

Now, you're really upping the ante- your exercise, if your follow the standard advice, will be cardio in nature- brisk walking, jogging, aerobics, spin classes... Your body will respond by losing muscle, since  this low level of working out tells your body that you need to be lighter, and muscle tissue is heavy- so, your body answers your demands and uses up muscle to prioritize fat storage for those long sessions of low exertion.

Eat plenty of "healthy whole grains"!

This is where our government gets involved.  Ever check out the USDA's "My Food Plate", which replaces their old "Food Pyramid"?  They recommend you eat 6-12 servings of grains per day!  Bread, pasta, cereal, skim milk(aka sugar-in-a-glass).  Your body will respond by spiking insulin, since whole wheat grains raise insulin faster and higher than a Snickers bar! Insulin is, among other things, a fat storage signal, and an aging hormone as well.  But heck, the US Dept. of Agriculture has lots of grains to sell, since they subsidize big Ag farmers to grow them...

Go to the Doctor frequently, and take all the medicines he suggests!

Statin drugs, which have side effects like muscle wasting, cancer, joint pain, and weight gain might be a good place to start.  It's a multi-billion dollar industry selling these drugs, and even though it probably won't reduce your risk of a heart attack at all, at least you're doing your patriotic duty- spending lots of money, staying sick (and getting sicker), and supporting big Agriculture, big Pharmaceuticals, and the payoffs they make to big Government and the Medical Schools.


So, there you have it in a nutshell: how to get fat and sick!  

What?  You want to achieve the opposite?!

Genome is destiny! Cats are like humans!

We act according to our genome....
Here are tiny felines, Cole and Zeke, acting out their genome "map"....  They are programmed to do certain things!  (This hierarchy of dominance is one of them).
 Here are another set of felines, way bigger than my boys; but doing much the same thing.
The point is, each of God's creatures is "programmed" to need and want certain things, according to their nature, encoded in their genome.  All in a species are quite similar, and are "programmed" through heredity to need certain things.  Felines need a carnivorous "Catkins" type of diet!  Rest assured, Zeke and Cole eat NO dry (grain-based!) "cat food"- only wet, canned food for my boys!  They are as healthy as cats can be!  They have achieved perfect catdom.   


We, as humans, are no different!  We need God-made food, not man made "food/crap"!  We do not need grains, especially modern grains that have been bred and "modified" so that pesticides, aka food toxins are built into the grain.  These toxins are in there to increase yields; there is no beneficial nutritional purpose.  We also need a specific, human diet!  Just as we need a specific, human set of behaviors- just as cats do!  Ours are more complex, but just as necessary.  We need to stress our muscles, we need to be exposed to things like dirt and moving around barefoot.  We need proper nutrition, meaning food as it has existed since the beginning of time, not as it has existed in a "fake" form, made by the Pharisees of modern times,,, the food scientists and big grain cartels and the FDA.


We need real work, not just sitting around in offices, and driving cars.  We are programmed that way!  If we don't get what we need, it is a slow sentence of lingering "diabesity"- a gradual weakening and sickening, and a slow, medicated to prolong the suffering courtesy of the Pharmaceutical industry and the medical industry "cartels".  The "medication" prescribed by the medical industry treats the symptoms only, and the side-effects of the drugs they offer is usually worse than the disease it is meant to treat!


We have all been "brainwashed" to the point where we expect to get sick!  This is crazy, and not in concert with the history of our genotype- we are meant to be healthy, and vital, just like cats, right up until we die at a ripe old age. ..


Here is how 60 year old humans (as of tomorrow!) are meant to act!  Just like Zeke and Cole, I am merely representing my genotype- resting without a chair as a "crutch"!

So, what is the bottom line here?

Eat real, God-made food- veggies, fruits, meats and seafood, nuts and high fat dairy like butter and cream.  Safe starches, without food toxins, like white rice and sweet potatoes are fine too, depending on your personal goals- need to lean out?  LESS starches, less fruit.

Too skinny?  MORE of the above, especially sweet potatoes and rice.

After that, be sure to get out in nature, stress your physical body by lifting and flexing, move around slowly a lot, and interact with your tribe:  your family, your true friends, your church body....

You get the idea!

Oh, and also be sure to incorporate the "Asian squat", pictured above, into your repertoire - not only does it help your flexibility immensely- it also grounds you to the earth!  Believe it or not, this tends to ground you as a human being.  And that is exactly what you and I are, current propaganda notwithstanding - humans who need things that are appearing more and more to be at odds with the needs and wants of governmental departments and industries.

High Fat Low Carb Diet is the same as a Paleo Diet!

It's true!  HFLC (High Fat Low Carb), or LCHF (Low Carb High Fat) are the same exact thing!


But did you also know that the  Paleo Diet is also the same as High Fat Low Carb or Low Carb High Fat??

Do you want to eat real food (as much as you like) and improve your health and weight? It may sound too good to be true, but LCHF is a method that has been used for 150 years. Now modern science proves that it works.

There is no weighing your food, no counting, no bizarre “meal replacements”, no pills. There is just real food and common sense. And by the way, all the advice here is 100 percent free.

Introduction
LCHF (Low Carb, High Fat) means you eat less carbohydrates with a higher proportion of fat. The most important point is to minimize your intake of sugar and starches. That way you can eat other delicious foods until you are satisfied – and still lose weight.

A number of recent high quality scientific studies show that LCHF makes it easier to lose weight and control your blood sugar. And that may just be the beginning.

The basics
Eat: meat, fish, eggs, vegetables growing above ground and natural fats (like butter).
Avoid: sugar and starchy foods (like bread, pasta, rice and potatoes).
Eat when you’re hungry until you are satisfied. It’s that simple. You do not need to count calories or weigh your food. And just forget about industrially produced low fat products.



Real food. Add some good fat (like butter).

There are good scientific reasons why LCHF works. When you avoid sugar and starches your blood sugar stabilizes and the levels of the fat storing hormone insulin drops. This increases your fat burning and make you feel more satiated.

Note for diabetics
Avoiding the carbohydrates that raise your blood sugar decreases your need for medication to lower it. Taking the same dose of insulin as before might result in hypoglycemia (low blood sugar). You will need to test your blood sugar frequently in the beginning and adapt (lower) your medication. This should ideally be done with the assistance of a knowledgeable physician. If you are healthy or a diabetic treated by diet alone or just with Metformin there is no risk of hypoglycemia.


Dietary advice
Eat all you like
Meat: Any type. Beef, pork, game meat, chicken. The fat on the meat is good as well as skin on the chicken. Try to choose organic or grass fed meat if you can.
Fish and shellfish: All kinds. Fatty fish such as salmon, mackerel or herring are great. Avoid breading.
Eggs: All kinds. Boiled, fried, omelettes. Preferably organic eggs.
Natural fat, fat sauces: Using butter and cream when you cook can make your food taste better and make you more satiated. Béarnaise, Hollandaise, read on the packages or make it yourself. Coconut fat, olive oil and canola oil are also good options.
Vegetables growing above ground: All kinds of cabbage, such as cauliflower, broccoli, cabbage, Brussels sprouts. Asparagus, zucchini, eggplant, olives, spinach, mushrooms, cucumber, lettuce, avocado, onions, peppers, tomatoes and more.
Dairy products: Always select high fat options. Real butter, cream (40% fat), sour cream, fat cheese. Turkish yogurt. Be careful with regular milk and skim milk as it contains a lot of milk sugar. Avoid flavored, sugary and low fat products.
Nuts: Good to eat instead of candy in front of the television (preferably in moderation).
Berries: Okay in moderation, if you are not a super strict /-sensitive. Good with whipped cream.
Maximum 5 grams of carbohydrate (excluding fiber) per 100 g of food is a basic tip for beginners.



Avoid if you can
Sugar: The worst. Soft drinks, candy, juice, sports drinks, chocolate, cakes, buns, pastries, ice cream, breakfast cereals. Preferably avoid sweeteners as well.
Starch: Bread, pasta, rice, potatoes, french fries, potato chips, porridge, muesli and so on. »Wholemeal products” are just less bad. Moderate amounts of root vegetables may be OK if you’re not too strict with the carbohydrates.
Margarine: Industrially imitated butter with unnaturally high content of omega-6 fat. Has no health benefits, tastes bad. Statistically linked to asthma, allergies and other inflammatory diseases.
Beer: Liquid bread. Full of malt sugar, unfortunately.
Fruit: Very sweet, plenty of sugar. Eat once in a while, treat it as a natural form of candy.
Once in a while
You decide when the time is right. Your weight loss may slow down a bit

Alcohol: Dry wine (regular red wine or dry white), whisky, brandy, vodka, drinks without sugar.
Dark chocolate: Above 70 % cocoa, preferably just a little.
Drink most days
Water
Coffee: Try it with full fat cream
Tea



The theory of LCHF
What are you designed to eat?
Humans evolved during millions of years as hunter-gatherers, without large amounts of carbohydrate. We ate the food that is available to us in nature by hunting, fishing and gathering all edible foods we could find. That did not include pure starch in the form of bread, pasta, rice or potatoes. We have only eaten such food for 5 – 10 000 years, since the beginning of agriculture. Just a limited adaptation of our genes can take place in such a relatively short time.

With the industrial revolution, 100 – 200 years ago, we got factories that could manufacture large amounts of pure sugar and white flour. Rapidly digested pure carbohydrates. There has been no time to genetically adapt to that food.

In the 80s the fear of fat gripped the western world. The low fat products appeared everywhere. If you eat less fat you need to eat more carbohydrates to feel full. At this time the worst epidemic of obesity and diabetes in history started. The most fatphobic country in the world, the USA, has been hit the hardest and is now the fattest major country in the world.

Today it is clear that the fear of real food with natural fat contents has been a mistake.

The problem of sugar and starch
All digestible carbohydrates are broken down to simple sugars in the intestines. The sugar is absorbed into the blood, raising the blood glucose. This increases the production of the hormone insulin. And insulin is our fat storing hormone.

Insulin is produced in the pancreas (pictured to the right). In large amounts insulin prevents fat burning and stores surplus nutrients in the fat cells. After some time (a few hours or less) this may result in a shortage of nutrients in the blood, creating feelings of hunger and cravings for something sweet. Usually at that point people eat some more. That starts the process again, a vicious cycle leading to weight gain.

A low intake of carbohydrates gives you a lower and more stable blood glucose, and lower amounts of insulin. This increases the release of fat from your fat stores and increases the fat burning. This usually gives fat loss, especially around the tummy in abdominally obese individuals.

Weight loss without hunger
LCHF makes it easier for the body to use its fat stores, as their release is no longer blocked by high insulin levels. This may be a reason why intake of fat gives a longer feeling of satiety than carbohydrates. Caloric intake usually drops in studies when the participants eat all they want on a low carb diet.

So, no counting or weighing of the food is required. You can forget about the calories and trust your feelings of hunger and satiety. Most people don’t need to count or weigh their food any more than they need to count their breathing. If you don´t believe it, just try a couple of weeks and see for yourself.

Health as a bonus
No animals in nature need the assistance of nutritional expertise or calorie charts to eat. And still, as long as they eat the food they are designed to eat they stay at a normal weight and they avoid caries, diabetes and heart disease. Why would humans be an exception? Why would you be an exception?

In scientific studies not only is the weight improved on a low carb diet – the blood pressure, blood sugar and cholesterol profile (HDL, triglycerides) is also improved. A calm stomach and less cravings for sweet food is also common experiences.

Initial side effects
If you stop eating sugar and starch cold turkey (recommended) you may experience some side effects as your body gets used to it. For most people it is relatively mild and just lasts a few days. Also there are ways to minimize it.

Common during the first week:

Headache
Tiredness
Dizziness
Heart palpitations
Irritability
The side effects rapidly subside as your body adapts and your fat burning increases. They can be minimized by drinking some extra fluid and temporarily increasing your salt intake somewhat. A good way can be some broth every few hours. Alternatively drink a few extra glasses of water and put some more salt on your food.

The reason is that carbohydrate rich foods may increase the water retention in your body. When you stop eating that food you will lose excess water through your kidneys. That may give dehydration and lack of salt in the first week before the body has had time to adapt.

Some prefer to decrease the intake of carbohydrates slowly, over a few weeks, to minimize side effects. But for most it is wise to take away most sugar and starch right away. A few extra pounds of fluids lost on the scale in the first days is great for the motivation.

How low to go?
The less carbohydrate you eat the more pronounced the effect on your weight and blood sugar will be. I recommend following the dietary advice as strict as you can. When you are happy with your weight and health you may gradually try eating more liberally (if you want to).
